Ingredients
  

Cupcakes

  • 2.5 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 teaspoons baking powder
  • 0.5 teaspoons salt
  • 1 cup unsalted butter, softened
  • 1 teaspoons vanilla extract
  • 1 cup strong brewed coffee, cooled

Mascarpone Frosting

  • 1 cup unsalted butter, softened
  • 8 ounces mascarpone cheese, softened
  • 4 cups powdered sugar
  • 0.5 cup strong brewed coffee, cooled
  • 1 teaspoon vanilla extract

Garnish

  • 2 tablespoons unsweetened cocoa powder

Instructions
 

Cupcake Preparation

  • Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  • Add the softened butter to the dry ingredients and beat on medium speed until combined and crumbly.

  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  • Gradually add the cooled coffee to the batter, mixing until just combined. Do not overmix.

  • Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
  • Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the cupcakes cool in the muffin tin for 10 minutes before transferring them to a wire rack to cool completely.

Frosting Preparation

  • In a large bowl, beat the softened butter until creamy.

  • Add the softened mascarpone cheese and beat until well combined.

  • Gradually add the powdered sugar, beating until smooth and fluffy. Mix in the cooled coffee and vanilla extract.

  • Once the cupcakes are completely cool, frost them generously with the mascarpone frosting.
  • Dust the tops of the cupcakes with unsweetened cocoa powder using a fine-mesh sieve.
