  • 1 lb Pasta (elbow macaroni)
  • 1 can Black beans drained and rinsed
  • 1 can Corn drained
  • 0.5 cup Taco seasoning
  • 1 cup Mayonnaise
  • 0.5 cup Sour cream
  • 1 tablespoon Lime juice

Preparation Steps

  • Cook pasta according to package directions.
  • Brown ground beef in a skillet over medium heat. Drain excess fat.
  • Stir in taco seasoning and cook for 1 minute.
  • In a large bowl, combine cooked pasta, ground beef, black beans, and corn.
  • In a separate bowl, whisk together mayonnaise, sour cream, and lime juice.
  • Pour dressing over pasta mixture and toss to combine.
  • Refrigerate for at least 30 minutes before serving.

Notes

Garnish with shredded cheese, chopped tomatoes, and avocado before serving.
