Ingredients
  

Crumble Topping & Base

  • 1.5 cup all-purpose flour
  • 1 cup rolled oats
  • 1 cup granulated sugar
  • 0.5 teaspoon salt
  • 0.75 cup unsalted butter, cold and cubed

Strawberry Filling

  • 2 cups fresh or frozen strawberries, chopped If using frozen, do not thaw
  • 0.5 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

Preparation Steps

  • Preheat oven to 375°F (190°C). Grease and flour an 8x8 inch baking pan.
  • In a large bowl, combine flour, oats, sugar, and salt for the crumble topping and base. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  • Press about two-thirds of the crumble mixture evenly into the bottom of the prepared baking pan to form the base.
  • In a separate bowl, gently toss the chopped strawberries with sugar, cornstarch, and lemon juice.
  • Spread the strawberry filling evenly over the pressed crumble base.
  • Sprinkle the remaining one-third of the crumble mixture over the strawberry filling.
  • Bake for 30-35 minutes, or until the crumble topping is golden brown and the strawberry filling is bubbly.
  • Let the bars cool completely in the pan on a wire rack before cutting into squares.

Notes

These bars are best enjoyed at room temperature or slightly chilled.
