Preparation Steps
Preheat oven to 375°F (190°C). Grease and flour an 8x8 inch baking pan.
In a large bowl, combine flour, oats, sugar, and salt for the crumble topping and base. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Press about two-thirds of the crumble mixture evenly into the bottom of the prepared baking pan to form the base.
In a separate bowl, gently toss the chopped strawberries with sugar, cornstarch, and lemon juice.
Spread the strawberry filling evenly over the pressed crumble base.
Sprinkle the remaining one-third of the crumble mixture over the strawberry filling.
Bake for 30-35 minutes, or until the crumble topping is golden brown and the strawberry filling is bubbly.
Let the bars cool completely in the pan on a wire rack before cutting into squares.
