  • 1 cup Vermicelli rice noodles
  • 1 cup Shredded carrots
  • 1 cup Shredded lettuce
  • 0.5 cup Fresh mint leaves
  • 0.5 cup Fresh cilantro
  • 1 tbsp Soy sauce

Preparation Steps

  • Cook vermicelli noodles according to package directions.
  • Prepare the filling by combining cooked noodles, shredded carrots, lettuce, mint, and cilantro.
  • Dip each rice paper wrapper briefly in warm water to soften.
  • Place a portion of the filling in the center of the wrapper. Fold the sides inward, then roll tightly from the bottom up.
  • Serve immediately with soy sauce or your favorite dipping sauce.

Notes

For a spicier kick, add some chopped chilies to the filling. You can also add shrimp, chicken, or tofu for extra protein.
