Instructions
Preparation Steps
Preheat oven to 400°F (200°C). Cut spaghetti squash in half lengthwise and remove seeds.
Place cut-side down on a baking sheet and bake for 40-45 minutes, or until tender.
While squash is baking, brown sausage in a skillet over medium heat. Add broccoli and cook until tender-crisp.
Once squash is cooked, let it cool slightly. Use a fork to scrape out the flesh and fluff it.
Toss the squash with the sausage and broccoli. Stir in Parmesan cheese, olive oil, garlic powder, salt, and pepper.
Serve immediately.
Notes
For a spicier dish, add a pinch of red pepper flakes. You can also substitute other vegetables for the broccoli, such as zucchini or bell peppers.
