  • 1 medium spaghetti squash
  • 1 pound Italian sausage removed from casings
  • 1 head broccoli cut into florets
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Preheat oven to 400°F (200°C). Cut spaghetti squash in half lengthwise and remove seeds.
  • Place cut-side down on a baking sheet and bake for 40-45 minutes, or until tender.
  • While squash is baking, brown sausage in a skillet over medium heat. Add broccoli and cook until tender-crisp.
  • Once squash is cooked, let it cool slightly. Use a fork to scrape out the flesh and fluff it.
  • Toss the squash with the sausage and broccoli. Stir in Parmesan cheese, olive oil, garlic powder, salt, and pepper.
  • Serve immediately.

Notes

For a spicier dish, add a pinch of red pepper flakes. You can also substitute other vegetables for the broccoli, such as zucchini or bell peppers.
