  • 1 lb Italian sausage
  • 1 medium Butternut squash Peeled, seeded, and cubed
  • 1 cup Onion Chopped
  • 2 cloves Garlic Minced
  • 0.5 tsp Sage
  • 2 tbsp Olive oil

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • In a large bowl, toss butternut squash, onion, garlic, sage, and olive oil. Season with salt and pepper.
  • Spread the mixture on a baking sheet and roast for 30 minutes.
  • Meanwhile, brown the sausage in a skillet over medium heat. Drain off any excess grease.
  • Add the roasted butternut squash mixture to the skillet with the sausage. Stir to combine and cook for 5 more minutes.
  • Serve hot.
