  • 0.25 cup unsalted butter softened
  • 0.5 cup granulated sugar
  • 0.5 cup packed brown sugar
  • 0.5 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.75 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1 cup semi-sweet chocolate chips

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

  • Beat in the pumpkin puree, egg, and vanilla extract until well combined.

  • In a separate medium bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice.

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Stir in the chocolate chips.

  • Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are set and lightly golden brown. The centers should still look slightly soft.
