These delicious no-bake peanut butter buckeyes are a classic treat with a creamy peanut butter filling dipped in rich chocolate. Perfect for holidays or any sweet craving!

In a large bowl, combine the peanut butter, softened butter, powdered sugar, and vanilla extract. Mix until well combined and a dough forms.
Roll the peanut butter mixture into 1-inch balls. Place them on a baking sheet lined with parchment paper.
Chill the peanut butter balls in the refrigerator for at least 30 minutes, or until firm.
Melt the chocolate chips and vegetable oil in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. Alternatively, melt over a double boiler.
Dip each chilled peanut butter ball into the melted chocolate, ensuring it is fully coated. Leave a small portion of the top uncoated to resemble a buckeye.
Place the coated buckeyes back on the parchment-lined baking sheet.
Refrigerate the buckeyes until the chocolate is set, about 15-20 minutes.
