Ingredients
  

Peanut Butter Filling

  • 2 cups Peanut Butter
  • 0.5 cup Butter unsalted, softened
  • 3 cups Powdered Sugar
  • 1 teaspoon Vanilla Extract

Chocolate Coating

  • 1.5 cups Chocolate Chips semi-sweet or milk chocolate
  • 1 tablespoon Vegetable Oil or shortening

Preparation Steps

  • In a large bowl, combine the peanut butter, softened butter, powdered sugar, and vanilla extract. Mix until well combined and a dough forms.
  • Roll the peanut butter mixture into 1-inch balls. Place them on a baking sheet lined with parchment paper.
  • Chill the peanut butter balls in the refrigerator for at least 30 minutes, or until firm.
  • Melt the chocolate chips and vegetable oil in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. Alternatively, melt over a double boiler.
  • Dip each chilled peanut butter ball into the melted chocolate, ensuring it is fully coated. Leave a small portion of the top uncoated to resemble a buckeye.
  • Place the coated buckeyes back on the parchment-lined baking sheet.
  • Refrigerate the buckeyes until the chocolate is set, about 15-20 minutes.
  • Serve and enjoy!

Notes

For a smoother chocolate coating, you can add a bit more oil. Store buckeyes in an airtight container in the refrigerator.
