Preparation Steps

  • Make the pasta dough: Combine flour and salt. Create a well and add eggs. Mix until a dough forms.
  • Knead the dough for 10 minutes until smooth and elastic.
  • Let the dough rest for 30 minutes.
  • Make the filling: Combine ricotta, Parmesan, and parsley.
  • Roll out the dough thinly. Cut into squares.
  • Place a spoonful of filling in the center of each square. Fold over to form a ravioli.
  • Cook ravioli in boiling salted water until they float to the surface.
