Crust Ingredients

  • 1.5 cups graham cracker crumbs
  • 0.5 cup sugar
  • 0.25 cup melted butter

Cheesecake Filling Ingredients

  • 16 ounces cream cheese softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs

Key Lime Curd Ingredients

  • 1 cup key lime juice
  • 1 cup sugar
  • 4 large egg yolks
  • 0.5 cup butter melted

Preparation Steps

  • Preheat oven to 350°F (175°C). Prepare a baking pan.
  • Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of prepared pan.
  • Beat cream cheese and sugar until smooth. Beat in vanilla and eggs, one at a time.
  • Spread cheesecake filling over crust.
  • Whisk together key lime juice, sugar, egg yolks, and melted butter. Pour over cheesecake filling.
  • Bake for 25-30 minutes, or until set. Cool completely before cutting into bars.

Store leftover bars in the refrigerator for up to 3 days.
