Place the bologna slices in a skillet over medium heat. Cook for about 2-3 minutes per side, or until lightly browned and slightly crispy.
Place one slice of bread, butter-side down, in the skillet with the bologna. Top with the bologna.
Place the second slice of bread, butter-side up, on top of the bologna. Grill for 2-3 minutes until the bread is golden brown and the cheese (if used) is melted.
Remove from skillet, slice in half if desired, and serve immediately.

Optional: Add cheese slices, mustard, or mayonnaise to your sandwich for extra flavor.
