  • 1 cup orzo pasta
  • 1 pound salmon fillet skinless
  • 1 cup heavy cream
  • 0.5 cup vegetable broth
  • 2 cloves garlic minced
  • 0.25 cup grated Parmesan cheese

Preparation Steps

  • Cook orzo according to package directions. Drain and set aside.
  • In a large skillet, cook salmon over medium heat until cooked through. Remove from skillet and flake.
  • Add garlic to the skillet and cook for 1 minute. Stir in heavy cream and vegetable broth. Bring to a simmer.
  • Add cooked orzo and flaked salmon to the skillet. Stir in Parmesan cheese. Season with salt and pepper to taste.

Notes

Serve immediately. Garnish with fresh parsley, if desired.
