  • 1 pound Shrimp, peeled and deveined
  • 1 can Coconut milk
  • 1 cup Chicken broth
  • 0.5 cup Vegetable broth
  • 1 tablespoon Lime Juice

Preparation Steps

  • In a large pot or Dutch oven, sauté garlic and ginger until fragrant.
  • Add coconut milk, chicken broth, vegetable broth and lime juice. Bring to a simmer.
  • Add shrimp and cook until pink and opaque, about 3-5 minutes.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh cilantro or lime wedges (optional).

Notes

For a spicier soup, add a pinch of red pepper flakes.
