Ingredients
  

Crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cups granulated sugar
  • 6 tablespoons unsalted butter, melted

Cheesecake Filling

  • 24 ounces cream cheese, softened
  • 0.75 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.25 cup sour cream

Preparation Steps

  • Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
  • In a medium bowl, combine graham cracker crumbs and 1/4 cup granulated sugar. Pour in the melted butter and stir until well combined.

  • Press the crumb mixture evenly into the bottom of the prepared baking pan.
  • In a large bowl, beat the cream cheese and 3/4 cup granulated sugar until smooth and creamy.

  • Beat in the eggs one at a time, then stir in the vanilla extract and sour cream until just combined.

  • Pour the cheesecake filling over the crust and spread evenly.
  • Bake for 25-30 minutes, or until the edges are set and the center is still slightly jiggly.
  • Let cool completely in the pan on a wire rack. Once cooled, refrigerate for at least 2 hours before cutting into bars.

Notes

For best results, ensure cream cheese and sour cream are at room temperature before mixing.
