Preparation Steps

  • Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, cumin, paprika, salt, and pepper. Roast for 20-25 minutes, or until tender.
  • Cook orzo pasta according to package directions. Drain and set aside.
  • Combine cooked orzo, roasted butternut squash, and black beans in a large bowl. Serve warm.
