  • 2 lb Russet Potatoes Peeled and cubed
  • 0.5 cup Sour Cream
  • 0.5 cup Milk
  • 4 oz Cream Cheese Softened
  • 1 cup Cheddar Cheese Shredded
  • 0.5 cup Bacon Cooked and crumbled
  • 2 tbsp Butter
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  • Boil the potatoes until tender, about 15-20 minutes. Drain well.
  • In a large bowl, mash the potatoes. Add sour cream, milk, cream cheese, cheddar cheese, bacon, butter, salt, and pepper. Mix well.
  • Pour the mixture into the prepared baking dish. Bake for 30 minutes, or until golden brown and bubbly.
  • Let cool slightly before serving.

Notes

This recipe can be made ahead of time and baked when ready to serve. Garnish with extra bacon and chives, if desired.
