Preparation Steps
In a bowl, mash the avocado with a fork. Add the shredded cabbage, carrots, and soy sauce. Mix well.
Place a spoonful of the avocado mixture in the center of each egg roll wrapper.
Fold the wrappers to create egg rolls. Seal the edges with water.
Heat the vegetable oil in a large skillet over medium-high heat.
Fry the egg rolls until golden brown and crispy, about 3-4 minutes per side.
Serve immediately.
Notes
For a richer flavor, add a teaspoon of sesame oil to the avocado mixture.
