  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract
  • 0.5 cup sliced almonds, toasted for topping

Preparation Steps

  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg, vanilla extract, and almond extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Roll the dough into small balls, about 1 inch in diameter. Place them on the prepared baking sheets, leaving some space between each cookie.
  • Gently press a few toasted sliced almonds onto the top of each cookie.
  • Bake for 12-15 minutes, or until the edges are lightly golden brown.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cooled cookies in an airtight container at room temperature for up to 5 days.
