Preparation Steps

  • Chop butternut squash into bite-sized pieces.
  • Toss butternut squash with olive oil, salt, and pepper.
  • Roast for 20-25 minutes, or until tender.
  • Stir in cranberries during the last 5 minutes of cooking.
